just say no to fast food

I successfully did not eat out again today. the pull has been great for the past couple of days because I know I have a little bit of cash and it is burning a hole in my wallet. I really should take it and deposit it where it has a better chance of sticking around.

anyway, I ate the lunch I brought today and it was quite satisfying, so I'm glad I did. I prepared a really good black bean soup last month and froze it, and it was was great warmed up again.

tonight I am going to battle the eating-out urge and force myself to eat vegetables and rice. I need more vegetables in my life!

    sure! it's my own recipe, modified from another, and I'm a vegetarian, so no ham hock or anything. feel free to change what you'd like to suit your own tastes. using dried beans REALLY makes a difference in the flavor, I think....canned just isn't the same.


    1 pound dry black beans, quick soaked and rinsed
    1 cup diced onions
    6 cups vegetable broth
    1 tsp garlic (2 cloves)
    1 Tbsp chili powder
    1 tsp ground cumin
    1 tsp black pepper
    1 Tbsp Italian spice blend (optional)


    1. Combine beans, onions, vegetable broth, and garlic in a slow cooker. Season with chili powder, cumin, pepper, and Italian spice blend if using.
    2. Cook on high for 4 hours. Reduce heat to low, and continue cooking for 2 hours, or until you are ready to eat. Alternatively, cook on low for eight hours.
    3. Serve with toasted garlic bread and butter.
